Wonderful Colombian coffee is often perceived as a given. Yet like anywhere else, truly outstanding coffee occurs only with benefit of true skill and careful processing. This year we are proud to be sourcing a Single Origin Espresso from Mr. Fabio Artunduaga, a producer working on his farm known as Finca Esperanza. Located in the Huila Department of Colombia, Fabio is focused on testing and evaluating methods of coffee processing. Because of his careful observations done year after year, Fabio has been able to hone in on the methods that result in the best cup possible. This involves a 24-hour fermentation process followed by a two-phased drying process using parabolic dryers as well as raised bed sun-drying. The result is a bean that is perfect for our Single Origin Espresso: unique, complex, and utterly delicious. It is neither easy nor quick to develop these techniques and to fully understand how to cultivate and process beautiful coffee, and so we celebrate his efforts with every single shot, cortado, cappuccino, or latte we drink. Grown at 1750 meters above sea level, this coffee goes above and beyond what we come to expect from coffee grown in Colombia.
All orders are roasted on Monday through Thursday and are shipped on the same day if order is received by noon on the day the order is placed, otherwise it will ship on the following day. Orders received after Thursday will be pushed to the following roast day.
