About Costa Rica Cinnamon Anaerobic Process:
Sourced in partnership thought our friends at Selva in Costa Rica and produced by one of our favorite Costa Rican producers Ivan Solis- featuring our first purchase of his Cinnamon Anaerobic Process- a technique by which Ivan adds real cinnamon to the fermentation process to yield a more complex and vibrant coffee. In the cup, this coffee is definitely cinnamon forward but also densely sweet, vibrantly acidic and complex with notes of cherry juice, cacao nib and gingerbread.
