This natural Tupi micro lot was grown, harvested and processed by Silvia Carolina Herrera Hernández, a second-generation coffee grower in Chiapas, Mexico’s southern-most origin.
Her farm San Luis spans a total of six hectares and sits between 1,400m to 1,600m. Silvia has been producing coffee at Finca San Luis since 2016.
After the cherries are hand picked and brought in from the field, Silvia undertakes the post-collection processing, she then sorts through the cherry manually and lays the coffee out to dry on raised beds for 30 to 35 days.
Silvia's care and exacting processing standards leads to a clean natural processed coffee with notes of pomello, papaya, and white grape. We are excited to be working with Silvia for our first time this year.
