Legendary Colombian producer Gabriel Castaño Buendía shares with us his natural processed pink bourbon for another year. Planted on his two hectare farm La Granada, the award winning pink bourbon varietal his name has been synonymous with shows off intense cacao and fruit notes.
A true pioneer in Colombian specialty coffee, Don Gabriel has spent decades cultivating the pink bourbon varietal. Having first identified the cherries on a few plants in the early 1990s, he has expertly isolated and developed this varietal into the highly sought after coffee that it is today.
Along with his intimate knowledge of this varietal, Gabriel Castano Buendia is a master at processing coffee. The environmental conditions in Southern Huila present many challenges to producing clean natural processed coffees, but
While Gabriel could have kept this coffee and his knowledge to himself, his level of care for coffee is reflected in his deep care for his community. He has selflessly committed himself to sharing his expertise with fellow coffee producers in Huila and Colombia as a whole.
This micro lot was fermented in cherry for 120 hours before being dried for three days. This extended fermentation and relatively quick drying process balance for deep, complex flavors with a clean finish.
Gabriel's coffee starts with complex flavors and intense sweetness due to its variety. In this lot, they appear as structured fruit forward notes of black currant and effervescent cherry cola.
On top of these flavors, the long fermentation natural process underpins these flavors with clear dark chocolate notes and ntense depth. Combined, these attributes exhibit exceptional quality achieved by Gabriel Castaño Buendía's lifelong dedication to this coffee.
