Colombia is the land of volcanoes and rivers, mountains and valleys, and it is always our goal to capture the intense beauty of the region in a simple cup of coffee.
Consacá is a municipality near the Department of Nariño, located in the southwest of Colombia just above the equator. The region has noticeable indigenous influence with a strong agricultural foundation. The coffee production of Consacá is second only to Nariño, and has some of the best conditions for drying in Colombia due to a micro-climate of low relative humidity and sunnier days. High altitudes of approximately 1850masl are ideal for ripening coffee cherries, and the benefits from fresh river water and volcanic soil means that the blend of coffees we chose to highlight reflects the true and diverse beauty the region has to offer. All cherries are picked at their peak of maturity, depulped and fermented in the traditional way for up to 16 hours. After the fermentation process, each producer sun-dries the coffee either on their patio and or greenhouse for a period of 10 days.
Having the opportunity to work with high caliber coffees from Colombia that exhibit some of our favorite characteristics in coffee is what drew us to sourcing this coffee. For us, bright and floral notes ring out in the cup, and we are excited to share this beautiful brew with the rest of the world.
All orders are roasted on Monday through Thursday and are shipped on the same day if order is received by noon on the day the order is placed, otherwise it will ship on the following day. Orders received after Thursday will be pushed to the following roast day.
