Geisha is a highly revered coffee variety that became famous when it began winning awards in Panama for its superior cup quality. It is believed that it is a descendant of Ethiopian seeds brought to Costa Rica in the 1940's. Geisha is floral, juicy and sweet; a truly elegant expression of the coffee plant.
Ivan began his coffee work as a truck driver. He drove to regional cherry collection stations, picking up fresh harvested cherries and delivering them to cooperative mills. It was here he grew his vast knowledge of the Tarrazu region, building relationships with the many small farmers in the area. He then went on to work for CoopeDota, a famous mill in the area, overseeing coffee processing operations. In 2009, he became a certified Q Grader, then in 2016, he left to start his own micro-mill.
Ivan sourced cherries for this lot from Adolfo Umaña, who's farm La Estrella is in the hills outside of Santa Maria de Dota. The Geisha cherries were processed by removing part of the mucilage and then drying on raised beds. This process produces high sweetness and increased fruit flavors in the cup.
