We are very pleased to offer you a special preparation of Worka Chelbessa this season. We loved the first shipment of coffee we received from the mill, produced using the traditional washed process. This year however, we were presented with a coffee produced using a technique inspired by the world of wine.The Carbonic Maceration technique used at Worka Chelbessa is similar to how certain Carbonic Beaujolais wines, or some natural wines, are produced.  In this method, the coffee cherries are not put in a sealed tank with CO2 gas being introduced - but rather whole coffee cherries are submerged in water and concrete blocks are put on top of a screen to weigh it down. In doing this some cherries at the bottom will be crushed, and through this a yeast is produced that and with the subsequent fermentation is produced. In the case of Worka Chelbessa they have varied the time the full cherry spends in the water from 48-90 hours and have leaned towards the mid to lower end of that time-frame to create the most complex coffees.  Once the whole coffee cherries have fermented in the tank long enough, the water is released and the cherry is sent for pulping and a light washing. After this, the coffee is dried on raised beds for 10-14 days.  Like in the Beaujolais and other natural wines, this style of Carbonic Maceration in processing is known for rounding out the citric acidity, but also bringing complex fruit notes forward without some of the wilder fruit notes found in natural processing.
