Notably, this coffee underwent a honey process—a method that bridges the gap between washed and natural processing. In a honey process, the coffee cherry’s skin is removed, but some of the sticky fruit mucilage is left on the bean during drying. This layer of mucilage—resembling honey in texture—is where the name comes from. As the coffee dries, it absorbs sugars and organic acids from the mucilage, lending the final cup a rounder body, pronounced sweetness, and layered complexity without the heavier fruit fermentation often found in naturals. It’s a labor-intensive approach that demands precision—and Alma has executed it beautifully.
