Small family farms around Oaxaca grow the coffee in this lot. Ripe cherries are harvested and brought together for processing.This lot, sun dried in the whole cherry, accentuates typica's big sweetness and bourbon's ripe fruit notes show up heavily in this coffee. Next caffeine is then naturally removed using the E.A. process, using a sugarcane byproduct to extract only the caffeine while leaving all of the coffee's original flavors. The result is almost indistinguishable from the starting coffee.
Decaf Esmeralda demonstrates that decaf doesn't mean giving up coffee. Just like its fully caffeinated relatives, care makes good coffee, not caffeine. In the cup we taste ripe Bartlett pear, deep demerara sugar, and gentle blood orange.
