This year marks our second harvest working with producer Dionisio Pintado, formerly producing coffee under La Gaviota and now Finca Aguas Cristalinas mark, Dioniso is mostly harvesting Caturra with a small amount of Geisha, which he separates and is sold under the name Willay. Willay, a quechua word that means “to signal” is a practice rooted in mysticism by which a yachachichi (shaman) will look to physical and biological signals in the climate, sun, moon & stars to offer farmers a preemptive, mystical guide for higher volume and quality crops. Aguas Cristalinas is located in Alto Ihumaca, a small town in San Ignacio in Peru’s northernmost province and is a prime region for growing coffee due to the climate and altitude but does historically present a challenge for adequate processing and transport do to the remoteness of his farm. Dionisio is also participates in a program called Cafes Solidarios. Café Solidario is a cooperative in partnership with Origin Coffee labs based in San Ignacio, with a 40-member team led by a team of coffee professionals who identify the very best coffees in this region and introduce innovation across the processing spectrum.  Outside of coffee, Cafes Solidario funds a public health project in the region offering free routine wellness checkups and other health services to all of the members of the cooperative. This year, we purchased a slightly lower amount (200 lbs) a 100 of which we released earlier this year at our café and now it’s time to release the second half of the Limited-Release Willay; an amazing example of quality work with an exceptionally magical variety.
