Carlos’s long time commitment to organic practices ensures this coffee is as environmentally conscious as it is exceptional. By avoiding synthetic chemicals and using natural soil amendments, he honors the land’s integrity while ensuring the coffee's best harvest.
Using a meticulous white honey process, Jacob highlights the coffee’s natural sweetness by drying the beans in a thin, sweet layer of fruit. This method preserves delicate notes of terroir, while imbuing them with fun, juicy fruit notes loved in catuai. Together, Carlos and Jacob create a coffee that’s both vibrant and refined.
Generational commitment to care – to coffee, to quality, and to land– define Don Eli honey. In the cup, we taste juicy grape followed by smooth sweet D’Anjou pear. Hints of lemon chiffon add a silky citrus finish, balancing the profile with refreshing clarity.
