Starting on farms in Colombia's famed Huila region, small holders attentively produce ripe . Growing conditions in this region contribute structured sweetness and acidity into the Castillo and Caturra cherries that make up Huila Rainbow. At harvest, only the ripest cherries are picked and sorted to ensure the highest quality coffee is being sent to decaffeination.
The caffeine is then gently removed using the sugar cane process. This allows the coffee to retain so much of the original characteristics of terroir and varietal that we love.
The resulting coffee has ripe fruit notes of apricot jam and a rich depth of marzipan, balanced with the warm sweetness of demerara sugar.
