Farmers around Worka Kubi cultivate landrace coffee varieties that are unique to the Gedeb on their small-scale farms. Once the coffee cherries reach ripeness, they are carefully harvested and transported to the washing station run by Negusse Debela. At the station, the cherries undergo a 72-hour fermentation process before being sun-dried on elevated beds. Only after the entire fruit has dried is the fruit removed from the bean and prepared for roasting. This process adds a distinctive tang and enhances the coffee's natural sweetness, resulting in a vibrant and rich flavor profile.
In the cup we taste notes of boysenberry, concord grape, and orange.
