This coffee starts its journey in Ethiopia's prized Guji region. Small holders attentively produce some top scoring coffee in the world. At harvest, only the ripest cherries are picked for maximum flavor. Whole cherries are dried in fruit, amping up sweetness and big fruit notes. Next caffeine is then gently removed using the Swiss Water Process. This allows the coffee to retain so much of the original characteristics of terroir, while removing 99.9% of the caffeine from each bean.
Decaf Guji Natural reminds us that great coffee comes at all caffeine levels. In the cup we taste ripe fruit notes of mission fig, pleasant dried orange acidity, and baker's chocolate sweetness.
