Milton tends his trees high in the Andes in the north of the country outside of Colasay. His farm sits at 1,800 meters above sea level where cool evening temperatures draw out the riping of the large, gem-like bourbon cherries. This drawn out ripening loads them with complex sugars and balanced nutrients.
After overseeing harvest to ensure only the ripest cherries make it into his coffee, Milton carefully washes his harvest, adding clarity to the cup. It is then sun-dried on patios until ready for roasting. Milton’s expert farming combines with this process to create a delicious brewing and drinking experience.
