Decaf gets a bad rap, but we think it shouldn’t. At Metric, we see decaf as the result of intention, care, and craft—not compromise. This Community Lot Natural Decaf comes from farmers in Tolima, Huila, and Nariño, where elevations range from 1,700 to 2,050 meters. Each lot is grown, picked, and processed with the same dedication as any other coffee we buy.
This lot is made up of Bourbon Ají, Castillo, Caturra, Colombia, Pacamara, and Pink Bourbon. The mix of cultivars brings balance and complexity, each adding its own character to the cup. These varieties are cultivated with attention to detail, preserving the flavor integrity Colombian coffees are known for.
Processing is 100% natural, with cherries fermenting anywhere from 40 to 220 hours. That extended fermentation boosts sweetness and layers in fruit complexity. Afterward, the coffee is dried using a mix of raised beds and mechanical dryers—roughly 40 hours in dryers, plus another 60 hours on raised beds—ensuring even moisture and stability.
The result is a decaf that’s anything but flat: expect cacao nibs, panela, raisins, dark chocolate, dried red fruits, azahar (orange blossom), and lulo juice. It’s proof that decaf can be vibrant, dynamic, and worth seeking out. By working closely with farmers across multiple regions, we’re able to deliver a consistent decaf that challenges expectations and showcases Colombia’s specialty coffee at its best.
