We are honored to have Nelson Chavez's washed caturra return to Metrics menu for the eighth year. This bright and balanced Colombian coffee combines sweet lemon brightness with ripe berry and deep sugar notes.
Our relationship with Nelson defines our direct sourcing model. Each year, Metric commits to purchasing his entire crop. This provides him the stability to focus on his coffee and ensures us a delicious offering to share with you harvest after harvest.
His farm La Esperanza sits at 2,150m in the Andes Mountains of Yacuanquer. At such high elevation, this coffee matures slowly in the Colombian sun and cool nights ensuring complex sugars and depth of flavor. Picked at their absolute ripest by Nelson and a small group of pickers, the cherries are then fermented for twenty fours, washed, and dried on raised beds for fourteen days.
The relationship Nelson shares with Metric and the care he puts into producing this coffee exemplifies the ethos of 'made by humans'. In the cup, we taste notes of dried meyer lemon, tayberry, and panella.
