Here, most families farm fewer than three hectares, tending their land with a level of care that’s been passed down for generations. Coffee moves by truck, mule, and even atop the roofs of municipal buses toward Pitalito, each bag representing a family’s week of work and pride.
On these small farms, Caturra, Colombia, and Castillo varieties grow beneath shade trees like guamo, banana, and eucalyptus. Producers favor simple, time-tested practices: selective picking, concrete-tank fermentation for 12–18 hours, and slow drying on raised beds or patios for up to three weeks. It’s deliberate, patient work—the kind that honors the region’s history and the tight-knit communities who have kept coffee at the center of life here.
Once delivered to the collection center, the coffee travels to Popayán for decaffeination using the EA (ethyl acetate) process—a natural method derived from fermented sugarcane. Through gentle steaming and repeated wash cycles, caffeine is removed without stripping away the character of the green coffee. No harsh chemicals, no high-heat abuse—just a careful, natural approach that preserves sweetness, clarity, and structure.
The result is one of the most honest expressions of Colombian decaf you’ll find: balanced, clean, and quietly complex. A decaf for people who still want the story, the craftsmanship, and the sense of place—just without the caffeine.
