Ethiopia Yirgacheffe is a sweet washed process coffee that plays a delicate acidity against light, refreshing fruit notes, underlined by the crisp sugars that make this region famous.
The high elevation and optimal soil conditions throughout Yirgacheffe allow the coffee cherries in this lot to mature slowly, developing complex sugars throughout the growing season. At harvest, pickers return to each tree every week to pick only the ripest cherries. This ensures optimal flavor. The coffee is then washed and fermented in cement tanks before being dried on raised beds. The level of care shown to this coffee come through in each sip and highlights what makes Ethiopian coffees so prized.
In the cup, we find notes of white grape, lemon zest, and turbinado sugar.
