Our latest coffee comes from five year producing partner Remigio Castellanos. This washed yellow catuai shows the best qualities of Honduran coffees with ripe fruit, tangy candy, and sugary citrus notes.
Remigio's farm is high in the mountains of Honduras in an area called El Cielito – little heaven. As the name suggests, this coffee is grown at high elevations in beautiful tropical forests. Mild temperatures and nutrient rich soil give this coffee its bold sugars, while the varietal gives its balanced but luxurious berry and tamarind notes. After Remi leads the harvest to ensure peak ripeness, the coffee is rested for 48 hours in cherry before being brought down the mountain to be washed and dried.
