On his land high in the mountains of Nariño, Carlos grows both red and yellow caturra. At harvest he carefully separates both lots to highlight their subtle distinctions. This also allows him to carefully track steps on his farm throughout the growing season. At harvest, only the ripest of each are picked and processed separately.
This red caturra selection reflects its intense color when ripe in its big red fruit notes and layered chocolate base. Carlos's expert processing skills intensify these further, leading to a coffee with great clarity as well as layered with complexity.
Having known Carlos since 2015, it is delightful to see his growth each season and welcome his coffee back to Metric's offerings again and again. In the cup we taste marionberry, cacao nib, and tangerine zest.
