Tres Cuartos SL-28 is an expressive exploration of varietal and terroir by Cup of Excellence Award Winning couple Alma Pineda & Evin Moreno. Following up on the success of the Natural process microlot, this clean, bright, and clear fully washed lot is a perfect picture of beloved varieties in new contexts.
Planted five years ago while Metric founder and green buyer was visiting Alma, the SL-28 trees are now in their second harvest and coming into their own. This specialty coffee darling is originally a Kenyan varietal. Planted in the unique microclimate of El Cedral, it expresses a compelling and distinct combination of its East African roots and the Central American soil in its layered flavor presentation.
For the washed half of this microlot, ripe cherries were rested for 24 hours before being expertly sorted and carefully having the fruit removed from the seed at the Moreno family mill. The clean, washed coffee was then dried on raised beds. In the cup we taste sweet white grapefruit acidity, ripe rainier cherry and wildflower honey sweetness.
