Grown on the misty slopes of El Cedral in Santa Bárbara, this lot showcases the very best of Honduran coffee. At Finca La Salsa, Benjamin cultivates rare varieties like Geisha and SL28—choices that speak to his dedication to innovation, precision, and long-term excellence.
This particular lot is processed using an anaerobic washed method, a technique that demands careful attention at every step. When done well, as it is here, it produces a cup that’s both clean and expressive—highlighting the coffee’s tropical fruit tones, bright citrus, and delicate floral notes like jasmine and honeysuckle. These high-toned characteristics are grounded by a rich, warming sweetness that carries through each sip.
The farm’s cool climate and elevation allow cherries to ripen slowly, giving sugars more time to develop and deepening the coffee’s complexity and structure. It’s an ideal environment for a variety like Geisha, bringing out its signature elegance and clarity.
